🔹 The Problem with Carrots: Why This So-Called “Health Food” Isn’t as Innocent as It Seems

Carrots are everywhere. Juiced, roasted, steamed, spiralized into noodles, or served raw as the crunchy star of every vegetable platter. They’ve been canonized as a “superfood,” recommended by nutritionists and parents alike. But despite their bright, cheerful color and the health halo they wear so confidently, carrots are far from the nutritional saints they’re made out to be.

  • Carrots also contain oxalates, compounds that can bind to minerals like calcium and magnesium, making them unavailable for absorption and contributing to the formation of kidney stones and joint calcifications over time.

Carrots may not spike blood sugar as rapidly as a can of soda, but their glycemic load is far from negligible. This is especially true when they’re juiced or consumed in large quantities. Juicing concentrates their sugar content while stripping away fiber, delivering a quick hit of glucose into the bloodstream.

Even in their raw form, the carbohydrates in carrots contribute to insulin secretion, and for those following a low-carbohydrate, fat-adapted, or carnivore lifestyle, this is counterproductive to maintaining metabolic flexibility and stable energy levels.

Finally, consider this: the carrots we consume today are nothing like their wild ancestors.

Our ancestors were not gnawing on bright orange sugar sticks for health. They prioritized nutrient-dense animal foods—organs, fatty cuts of meat, and collagen-rich connective tissue—all of which provided highly bioavailable nutrients in forms the body can immediately use.
